
Here is our mobile pizza oven! The trailer is made from a 1940′s truck bed. It is very unique which makes it an attention getter.

The tray is welded to the frame of the trailer. The tray has about 2 inches of sand and a layer of fire brick over that, which is what the oven sits on.
The first event for this oven is going to be the Pier Veiw Market at Snake River Landing in Idaho Falls on May 28 from 10am untill 2pm and every Saturday through the rest of the summer. We will also be at the Sunset Market at the Grand Teton Mall in Idaho Falls every Friday through the summer from 4pm untill 8pm. We look forward to showing it off. What is a wood fired pizza oven?
A wood fired pizza/bread oven is an oven made out of clay adobe, refractory fire bricks or refractory concrete(heat resistant mix made from ingredients that can withstand prolonged high heat conditions). Traditionally, ovens were made using material that wasn’t costly and was easy to obtain in nature. Nowadays, we have everything we need to build a wood oven readily available in most refractory and building store yards.
What do we actually do when we use a wood fired brick oven?
A fire is built inside the oven, oh right you knew that part, so what’s next? The fire burns, giving off the heat which the heavy oven walls absorb. When the dome chamber inside is heated to flat white-hot, the fire is allowed to die down or kept burning only very gently for longer. The embers can be swept out of the oven or pushed to the side.
The pizzas from a wood fired oven are unique because the properties of the oven cook them in three different ways all at once. There is reflected heat from the top of the dome, then there is the heat from the brick floor of the oven and last there is convection as cold are is drawn into the oven and heated.
The three sources combine to cook the pizza perfectly in about 90 seconds to two minutes. The sauces, cheeses and toppings are perfectly cooked and browned and the crust gets just the right amount of char to give it that unique smoky wood fired flavor.
